According to doctors, the surprising trigger was a dish many people eat regularly without a second thought: water spinach stir-fried with garlic.

What Happened?

The woman reportedly enjoyed a generous portion of stir-fried water spinach at dinner. By late night, she began experiencing severe abdominal pain, nausea, vomiting, and extreme fatigue. Her urine output dropped sharply, and swelling appeared in her legs and face.

Blood tests at the hospital revealed sudden kidney dysfunction, with dangerously elevated toxin levels in her bloodstream. Doctors quickly identified the likely cause: toxic contamination linked to improperly sourced or prepared water spinach.

Why Can Water Spinach Be Dangerous?

Water spinach (also known as kangkong or morning glory) grows in wet, muddy environments, making it especially vulnerable to hidden dangers:

  • Heavy metal accumulation
    Water spinach can absorb lead, cadmium, arsenic, and mercury from polluted water and soil. These toxins are extremely harmful to the kidneys and may cause damage after repeated or heavy exposure.

  • Parasites and bacteria
    If grown in contaminated canals or wastewater, the vegetable may carry parasites, E. coli, or other harmful bacteria that are not fully eliminated by quick stir-frying.

  • Pesticide residue
    Some farms use excessive or banned chemicals to speed growth, leaving residues that can strain the liver and kidneys.

Doctors emphasized that garlic stir-frying does NOT neutralize heavy metals or chemical toxins, even though it kills some surface bacteria.

  • Anyone consuming water spinach frequently or in large quantities
